The first contact with your sparkling will be the eye contact. Examine the bubbles, their size, their speed, their quantity, the mousse on the surface. Look at the brilliance and the colour nuances of the wine. The foam should be fine and creamy, the wine must be elegant and its purity should invite you to drink it.
Then open the aromas by gently rotating the wine in the glass. Take your time to smell them and try to appreciate their nuances, intensity and complexity. Are they more fruity (citrus, red fruits, dry fruits,...) or floral, or buttery, or...?
Now it's time to take a small sip into your mouth. Keep it for a few moments on your palate before drinking. You should first have an impression of fruitiness, freshness and roundness. Then on the mid-palate, you should be able to assess the complexity of the secondary flavours and the richness of the structure and the elegance of its texture. Finally, drink the wine and appreciate its length. At the end of the process, should the wine be good (or excellent) you must remain with an impression of nice balance and harmony between all the components.
